Chorizo Bolognese
Ingredients
- 2 tbsp olive oil
- 1 large onion
- 2 large carrots
- 4 stalks celery
- 250g chorizo
- 1 kg mince (half beef, half pork)
- 3 tbsp tomato purée
- 4 cloves garlic
- 1-2 courgettes
- 2-3 red peppers
- 2 cans chopped tomatoes
- 1 cube beef stock
- Salt and pepper
- Pasta of your choice to serve
Preparation
Wash and chop all the vegetables.
In a large pot, heat the olive oil and cook the onion, carrots, and celery over medium heat for ten minutes.
Chop the chorizo and add it to the pot. Cook for 5 minutes.
Add the mince to the pot and break it up, combining it with the vegetables.
Stir in the tomato purée and garlic.
Add the courgettes and peppers.
Pour in the chopped tomatoes. Refill both cans with water and add this to the pot as well.
Crumble in the beef stock cube.
Cover the pot and simmer for 2 hours. Skim off any excess oil that gathers on the top.
Uncover, stir well, and simmer for another one to two hours until the sauce reaches the desired thickness and flavor.
Season with salt and pepper.
Serve the chorizo bolognese with spaghetti.
