Crispy Chicken Parmesan with Classic Caesar Salad

Ingredients

  • 2 chicken filets {or breasts pounded}
  • 2 eggs
  • 1 tsp hot sauce
  • 1 cup panko breadcrumbs {reg or #GF}
  • 1/3 cup shredded Parmesan
  • 1 tbsp Italian seasoning
  • 1 tsp chili flakes
  • 1 tsp garlic powder
  • Salt & pepper
  • 4 slices mozzarella
  • 1/2 cup marinara
  • Romaine lettuce
  • Caesar dressing {DM me for my go-to recipe!}
  • Optional: crumbled bacon & extra Parmesan

Preparation

  1. Prep chicken {if using breast pound chicken between two pieces of seran wrap until evenly thinned out} & season both sides with salt & pepper.

  2. Whisk together eggs & hot sauce in one bowl & bread crumbs + spices + cheese in the other.

  3. Dip chicken into egg & then bread crumbs mixture.

  4. Spray with olive oil & air fry for 7 mins per side {or bake at 425 for 12 mins per side}.

  5. Spoon marinara on top of crispy chicken & top with cheese.

  6. Broil for 1-3 mins until cheese has melted.

  7. Wash & chop lettuce, toss with dressing, sprinkle with crumbled bacon & Parmesan.

  8. Assemble plates AND if you’re really feeling extra, make a side of garlic bread.
