Gnocchi with Pea and Pistachio Pesto

Ingredients

  • 1 cup peas (use organic, frozen peas)
  • 1/3 cup shelled pistachios
  • 1 cup baby spinach
  • 1 cup arugula
  • 2 tbsp nutritional yeast
  • 1 tsp garlic powder (or 1 garlic clove)
  • 1 tsp lemon juice
  • Salt and pepper to taste
  • 1/4 cup unsweetened plant milk
  • 1/4 cup cooking liquid (or water)
  • Gnocchi/pasta of choice (use a mix of spinach and regular potato gnocchi)

Preparation

  1. Blend up all ingredients for the pesto until smooth and serve with your favorite gnocchi/pasta

  2. I added a few extra peas and greens to my dish

  3. Any mixture of greens will work for this recipe (spinach, arugula or kale are my favorite) and adding fresh basil is really yum too

  4. Always reserve some of the gnocchi/pasta cooking liquid before draining, to thin out the pesto and/or to add to the dish to help achieve a creamier texture
