Keto-Friendly Vegan Zoodle Alfredo
Ingredients
- 2 zoodled zucchini
- 2 finely chopped shallots
- 1 minced garlic
- 1 tablespoon finely chopped canned jalapeño
- 4-5 finely chopped sun-dried tomatoes
- 1/2 cup sweet corn
- 1 cup roasted or blanched cauliflower florets
- 1/2 pint oat milk
- 1/4 cup pea protein
- zest of 1 lemon
- salt and pepper to taste
Preparation
Whisk together pea protein and oat milk.
Heat butter in a pan and add shallots and garlic. Pour in the oat milk mixture and stir to combine.
Add jalapeño, sun-dried tomatoes, lemon zest, sweet corn, and cauliflower. Season with salt and pepper.
Cook on low heat until sauce thickens, then stir in zoodles.
Tips
Pea protein can be replaced with 1 tablespoon of normal or gluten-free flour for thickening.
