Vegan Green Pesto for Pasta Dishes
Ingredients
- 2 cups fresh basil leaves (4oz)
- 1 cup fresh parsley
- 1 garlic clove
- 1/2 cup nutritional yeast
- 1/4 cup pine nuts
- 1/4 cup virgin olive oil
- 1 Tbsp lemon juice
- 1/2 tsp salt
Preparation
Blend all ingredients until creamy.
Use a few tablespoons of hot pasta water to smoothen the pesto before mixing with the pasta.
