Tomato Pasta with Slow-Roasted Tomatoes
Ingredients
- 1 small white onion
- 3 garlic cloves
- 1 tin chopped tomatoes or passata
- A generous handful of fresh basil leaves
- 1 tablespoon olive oil
- A generous pinch of salt and pepper
Slow roasted tomatoes
- 250 grams cherry tomatoes
- Olive oil for drizzling
- Salt and pepper to taste
To serve
- Your favorite pasta
Preparation
Slice the cherry tomatoes in half.
Place them cut-side up on a baking tray.
Drizzle with olive oil and sprinkle with salt and pepper.
Roast in the oven at 150°C for 35-40 minutes until they keep their shape.
Meanwhile, heat olive oil in a large pan.
Add chopped onion and sauté for 5 minutes until caramelized.
Add minced garlic and cook for another minute.
Add chopped tomatoes and mix well.
Simmer covered for 20-25 minutes.
Add chopped basil and cook for another minute.
Cook pasta according to package instructions.
Drain the pasta and add it to the tomato sauce.
Sprinkle with fresh basil and top with slow-roasted cherry tomatoes.
Serve immediately.
Notes
Roast tomatoes at low temperature to prevent them from breaking down into sauce.
The tomato sauce can be served without blending if desired.
