Vegan Spinach and Cashew Cheese Lasagna

Ingredients

  • 250gr of lasagna sheets ⠀
  • 2 cloves of garlic⠀
  • 1 onion⠀
  • 700gr of passata sauce⠀
  • 1 cup of raw cashews soaked in water for 3-6 hours or in boiling water for 20 minutes⠀
  • 3 tbsp of nutritional yeast⠀
  • 1 tsp of garlic powder⠀
  • 1/2 tsp of onion powder⠀
  • 1/2 lemon squeezed⠀
  • salt and pepper to taste⠀
  • 500gr of baby spinach or frozen spinach -thawed⠀
  • 2/3 cup of water ⠀
  • 2 tomatoes

Preparation

  1. Preheat your oven to 180 degrees celsius;⠀

  2. Drain and rinse your cashews then blend them in a blender with water, nutritional yeast, garlic and onion powder, salt and lemon juice

  3. Blend until smooth then add the thawed spinach and combine

  4. Dice your onion and garlic cloves

  5. Start layering your lasagna in a lasagna dish starting with passata sauce, lasagna sheet, then onions and garlic, passata sauce, lasagna sheets then the spinach cashew cheese and repeat again until the lasagna is finished

  6. Top with sliced tomatoes, salt and pepper

  7. Bake in the oven for 45 minutes at 180 degrees celsius
