Soba Noodle Stir Fry

Ingredients

  • 1 large carrot
  • A big handful of shredded white cabbage
  • 1 head of broccoli
  • 1 stem of pak choi
  • 100 g king oyster mushrooms
  • soba noodles (for 2)

Sauce

  • 4 tbsp soy sauce
  • 3 tbsp agave syrup
  • 2 tsp sriracha
  • 2 tsp sesame oil
  • 1/2 thumb of grated ginger

Preparation

  1. Chop all the veggies into smaller pieces.

  2. Add them to a pan with a splash of water and let the veggies fry off for a few minutes until they are cooked through.

  3. Meanwhile cook the soba noodles.

  4. When the noodles are done, add to the stir fry.

  5. Mix the sauce ingredients together in a bowl and pour over the stir fry.

  6. Mix everything together and serve.

Tips

  1. Top with a sprinkle of sesame seeds for added flavor.
