Udon Noodles with Sauteed Veggies

Ingredients

  • Udon Noodles with Sauteed Veggies
  • Handful of thin udon noodles (Janice used @hakubakuus organic udon)
  • Handful of mushrooms, sliced
  • Half a small red onion, sliced
  • Half a bell pepper, sliced
  • Sesame oil
  • Low sodium soy sauce

Preparation

  1. Boil water in a medium sized pot

  2. As water is heating up, slice vegetables and then in a large pan, sauté vegetables in a couple of tablespoons of sesame oil and a dash of salt. Cook until desired tenderness

  3. Cook noodles (these only take 4 minutes!) and drain

  4. Add noodles to pan with veggies and toss with a splash of low sodium soy sauce

  5. Add to a bowl and serve

  6. If your toddler is new to noodles, use scissors to cut it up a bit after it’s in the bowl
