Udon Noodles with Sauteed Veggies
Ingredients
- Udon Noodles with Sauteed Veggies
- Handful of thin udon noodles (Janice used @hakubakuus organic udon)
- Handful of mushrooms, sliced
- Half a small red onion, sliced
- Half a bell pepper, sliced
- Sesame oil
- Low sodium soy sauce
Preparation
Boil water in a medium sized pot
As water is heating up, slice vegetables and then in a large pan, sauté vegetables in a couple of tablespoons of sesame oil and a dash of salt. Cook until desired tenderness
Cook noodles (these only take 4 minutes!) and drain
Add noodles to pan with veggies and toss with a splash of low sodium soy sauce
Add to a bowl and serve
If your toddler is new to noodles, use scissors to cut it up a bit after it’s in the bowl
