Vegan Rainbow Sushi Rolls
Ingredients
- 2 cups sushi rice
- 1/4 cup rice vinegar
- 1 tablespoon maple syrup (optional)
- 1 teaspoon blue spirulina
- 1 teaspoon pitaya powder
- 1 teaspoon butterfly pea powder
- 1 teaspoon matcha powder
- 1 teaspoon turmeric
- Seaweed sheets or nori
- Assorted vegetables for fillings, such as peppers, cucumbers, carrots
Preparation
Cook the sushi rice according to package instructions
In a small bowl, mix the rice vinegar and maple syrup if using
Divide the cooked rice into separate portions and stir in each colored powder (blue spirulina, pitaya powder, butterfly pea powder, matcha powder, turmeric) to create different colored rice batches
Prepare the fillings by chopping vegetables into thin strips
Lay a seaweed sheet on a bamboo mat, spread a layer of colored rice, add the vegetable fillings, and roll tightly
Slice the rolls into bite-sized pieces and serve immediately
Notes
The butterfly pea powder may turn purple when mixed with the vinegar mixture due to acidity
Fillings can be customized with any favorite vegetables or additions
This recipe uses natural superfoods for coloring, avoiding artificial dyes
