Vegan Cucumber Sushi Rolls

Ingredients

  • cucumber
  • sushi rice (prepared with rice and rice vinegar)
  • assorted vegetables such as avocado, carrot strips, beetroot
  • cream cheese or hummus

Optional

  • soy sauce
  • sesame seeds
  • other spices

Preparation

  1. Use a long and big cucumber for easier rolling.

  2. Peel the cucumber into long strips using a vegetable peeler.

  3. Lay the cucumber slices out on a cutting board.

  4. Spread cream cheese or hummus along the length of each slice.

  5. Place cold sushi rice and chosen vegetables on top, ensuring not to overstuff.

  6. Roll the slice together tightly until the end.

  7. Secure each roll with a toothpick.

  8. Cut the roll into smaller sushi pieces.
