Vegan Marinated Tomato Sushi Rolls

Ingredients

  • 3 beefsteak tomatoes
  • 4 tbsp soy sauce
  • Thumb-sized piece of ginger
  • 2 tbsp white vinegar
  • 1/2 nori sheet, crumbled
  • 1/4 cup water
  • 2 tbsp vegan mayo
  • 1 tbsp sriracha
  • 3 nori sheets
  • 1 cup cooked sushi rice

Preparation

  1. Score the top of the tomatoes making a cross and boil for 2-3 minutes

  2. Immediately cool in an ice water bath

  3. Mix soy sauce, vinegar, ginger, water and nori

  4. Peel and deseed tomatoes, then dice into small cubes

  5. Marinate for 20-30 minutes in soy sauce mixture

  6. Drain and mix with mayo and sriracha

  7. Assemble the sushi rolls by placing a nori sheet on a surface, spreading the rice evenly, adding the tomato mixture, rolling tightly, and slicing into pieces
