Vegan Marinated Tomato Sushi Rolls
Ingredients
- 3 beefsteak tomatoes
- 4 tbsp soy sauce
- Thumb-sized piece of ginger
- 2 tbsp white vinegar
- 1/2 nori sheet, crumbled
- 1/4 cup water
- 2 tbsp vegan mayo
- 1 tbsp sriracha
- 3 nori sheets
- 1 cup cooked sushi rice
Preparation
Score the top of the tomatoes making a cross and boil for 2-3 minutes
Immediately cool in an ice water bath
Mix soy sauce, vinegar, ginger, water and nori
Peel and deseed tomatoes, then dice into small cubes
Marinate for 20-30 minutes in soy sauce mixture
Drain and mix with mayo and sriracha
Assemble the sushi rolls by placing a nori sheet on a surface, spreading the rice evenly, adding the tomato mixture, rolling tightly, and slicing into pieces
