Vegan Katsu Sushi Sandwiches
Ingredients
- 3 cups uncooked Japanese rice
- 1/2 cup rice wine vinegar
- 3 tablespoons white sugar
- 1 1/2 teaspoons sea salt
- nori sheets
- breaded hot and spicy vegan fillets from Quorn
- carrot ribbons
- lettuce
- sesame seeds
- homemade teriyaki sauce
Preparation
Wash the Japanese rice 2-3 times with water.
Cook the rice in a rice cooker using a 1:1 ratio of rice to water.
While the rice is cooking, mix rice wine vinegar, white sugar, and sea salt in a large bowl.
Once the rice is cooked, add it to the vinegar mixture and mix well.
Cover the rice with a damp towel and refrigerate for at least 1 hour.
Prepare the fillings by making carrot ribbons and cooking the breaded vegan fillets if necessary.
Assemble the sushi sandwiches by wrapping the sushi rice in nori sheets and filling with the vegan katsu fillets, carrot ribbons, and lettuce.
Finish by sprinkling with sesame seeds and drizzling with homemade teriyaki sauce.
Serve immediately.
