Vegan Katsu Sushi Sandwiches with Teriyaki Sauce

Ingredients

Sushi rice

  • 3 cups uncooked Japanese rice
  • 1/2 cup rice wine vinegar
  • 3 tbsp white sugar
  • 1 1/2 tsp sea salt

Sandwich fillings

  • Japanese sushi rice
  • nori sheets
  • breaded hot and spicy vegan fillets (such as Quorn)
  • carrot ribbons
  • lettuce
  • sesame seeds
  • homemade teriyaki sauce

Preparation

Rice

  1. Wash the Japanese rice 2 to 3 times with water

  2. Cook the rice in a rice cooker using 1 cup water per 1 cup rice

  3. While the rice is cooking, pour rice vinegar, sugar and salt into a large wooden or ceramic bowl and mix well

  4. Once the rice is cooked, add it into the vinegar mixture and mix well

  5. Cover the rice with a damp towel and refrigerate for at least 1 hour

Sandwich assembly

  1. Place a sheet of nori on a clean surface

  2. Spread a layer of Japanese sushi rice over the nori

  3. Arrange the breaded vegan fillets, carrot ribbons and lettuce on top of the rice

  4. Sprinkle generously with sesame seeds

  5. Drizzle with homemade teriyaki sauce

  6. Roll the nori sheet to form a sandwich roll

Notes

  1. Rice wine vinegar is essential
