Vegan Tofu Katsu Onigirazu

Ingredients

  • 3 cups uncooked Japanese rice
  • 1/2 cup rice wine vinegar
  • 3 tablespoons white sugar
  • 1.5 teaspoons sea salt
  • Nori sheets
  • Breaded hot and spicy vegan tofu fillets
  • Carrot
  • Lettuce
  • Sesame seeds
  • Homemade teriyaki sauce

Preparation

Rice

  1. Wash the Japanese rice 2-3 times with water.

  2. Cook the rice in a rice cooker with an equal amount of water.

  3. While the rice is cooking, mix rice wine vinegar, sugar, and salt in a large bowl.

  4. Once the rice is cooked, add it to the vinegar mixture and mix well.

  5. Cover the rice with a damp towel and refrigerate for at least 1 hour.

Assembly

  1. Wrap the seasoned rice in nori sheets.

  2. Fill with breaded tofu katsu, carrot ribbons, and lettuce.

  3. Finish with sesame seeds and homemade teriyaki sauce.
