Easy Vegan Katsu Sushi Sandwiches

Ingredients

Sushi rice

  • 3 cups uncooked Japanese rice
  • 1/2 cup rice wine vinegar
  • 3 tablespoons white sugar
  • 1 1/2 teaspoons sea salt

Sandwich

  • nori sheets
  • breaded hot and spicy vegan fillets from Quorn
  • carrot ribbons
  • lettuce
  • sesame seeds
  • homemade teriyaki sauce

Preparation

Preparing sushi rice

  1. Wash the Japanese rice 2-3 times with water.

  2. Cook in a rice cooker with equal parts water.

  3. While the rice is cooking, mix rice wine vinegar, sugar, and salt in a large bowl.

  4. Once rice is cooked, add it to the vinegar mixture and mix well.

  5. Cover with a damp towel and refrigerate for at least 1 hour.

Assembling sandwiches

  1. Lay a nori sheet flat.

  2. Spread prepared sushi rice evenly on the nori.

  3. Add fillings including breaded vegan fillets, carrot ribbons, and lettuce.

  4. Sprinkle with sesame seeds and drizzle with homemade teriyaki sauce.

  5. Roll or press into a sandwich shape and cut if desired.

Notes

  1. Prepare homemade teriyaki sauce separately using a standard recipe with soy sauce, sugar, and mirin.
