Tofu Katsu Sushi Sandwiches

Ingredients

Rice

  • 3 cups uncooked Japanese rice
  • 1/2 cup rice wine vinegar
  • 3 tbsp white sugar
  • 1 1/2 tsp sea salt

Sandwich components

  • Nori sheets
  • Breaded hot and spicy vegan fillets
  • Carrots
  • Lettuce
  • Sesame seeds
  • Homemade teriyaki sauce

Preparation

Preparing the rice

  1. Wash the Japanese rice 2-3 times with water.

  2. Cook in a rice cooker using a 1:1 ratio of rice to water.

  3. While the rice is cooking, combine rice wine vinegar, white sugar, and sea salt in a large bowl and mix well.

  4. After the rice is cooked, add it to the vinegar mixture and stir thoroughly to coat the rice.

  5. Cover the rice with a damp towel and refrigerate for at least 1 hour.

Assembling the sandwich

  1. Lay a sheet of nori on a flat surface

  2. Place a portion of sushi rice in the center of the nori

  3. Add the breaded hot and spicy vegan fillets, carrot ribbons, and lettuce on top

  4. Top with more sushi rice and fold the nori to form a square sandwich

  5. Sprinkle with sesame seeds and drizzle with homemade teriyaki sauce.
