Vegan Katsu Sushi Sandwiches
Ingredients
- 3 cups uncooked Japanese rice
- 1/2 cup rice wine vinegar
- 3 tablespoons white sugar
- 1 1/2 teaspoons sea salt
- nori sheets
- breaded hot and spicy vegan fillets (Quorn)
- carrot ribbons
- lettuce
- sesame seeds
- homemade teriyaki sauce
Preparation
Sushi rice
Wash the Japanese rice 2-3 times with water
Cook the rice in a rice cooker with equal parts water (1:1 ratio)
While the rice is cooking, pour rice vinegar, sugar, and salt into a large wooden or ceramic bowl and mix well
Once rice is cooked, add it to the vinegar mixture and mix well
Cover the rice with a damp towel and refrigerate for at least 1 hour
Assembly
Wrap sushi rice in nori sheets and fill with breaded vegan fillets, carrot ribbons, and lettuce
Sprinkle with sesame seeds and drizzle with homemade teriyaki sauce
