Vegan Katsu Sushi Sandwiches

Ingredients

  • 3 cups uncooked Japanese rice
  • 1/2 cup rice wine vinegar
  • 3 tablespoons white sugar
  • 1 1/2 teaspoons sea salt
  • nori sheets
  • breaded hot and spicy vegan fillets (Quorn)
  • carrot ribbons
  • lettuce
  • sesame seeds
  • homemade teriyaki sauce

Preparation

Sushi rice

  1. Wash the Japanese rice 2-3 times with water

  2. Cook the rice in a rice cooker with equal parts water (1:1 ratio)

  3. While the rice is cooking, pour rice vinegar, sugar, and salt into a large wooden or ceramic bowl and mix well

  4. Once rice is cooked, add it to the vinegar mixture and mix well

  5. Cover the rice with a damp towel and refrigerate for at least 1 hour

Assembly

  1. Wrap sushi rice in nori sheets and fill with breaded vegan fillets, carrot ribbons, and lettuce

  2. Sprinkle with sesame seeds and drizzle with homemade teriyaki sauce
