Vegan-Friendly Chickpea Sushi Balls

Ingredients

  • 1 1/2 cups cooked or canned chickpeas
  • 1 1/2-2 cups cooked rice (preferably brown rice)
  • 2 tablespoons mayonnaise (use dairy-free for vegan option)
  • 1 tablespoon sriracha
  • 1 tablespoon soy sauce
  • 3/4 cup torn nori seaweed, plus more for coating
  • Sesame seeds for coating
  • Chili flakes for coating
  • Hummus (for sauce)
  • Water (for sauce)

Preparation

  1. Mash the chickpeas in a large mixing bowl using a potato masher or fork.

  2. Add the cooked rice, mayonnaise, sriracha, soy sauce, and torn nori; mix thoroughly.

  3. Form the mixture into balls using your hands.

  4. Place the balls in a container and add additional torn nori, sesame seeds, and chili flakes.

  5. Secure the lid and shake well to coat all balls evenly.

  6. Mix hummus, sriracha, and water to make the sauce.
