Vegan Ramen with Veggie Dumplings
Ingredients
- 1 liter / 34 oz vegetable stock
- 2 garlic cloves minced
- 1 tablespoon ginger minced
- 2 tablespoons sesame or vegetable oil
- 1 tablespoon rice vinegar
- 3 tablespoons soy sauce
- Handful chopped mushrooms
- 1 stick scallion
- Ramen noodles
Additional components
- Veggie dumplings
Preparation
Heat the oil and sauté garlic and ginger for 2-3 minutes
Then add soy sauce, rice vinegar, and vegetable stock.
Put on a lid and bring it to a simmer.
Cook ramen noodles until done
Add mushrooms, scallion, ramen noodles, and veggie dumplings.
