Vegan Ramen with Veggie Dumplings

Ingredients

  • 1 liter / 34 oz vegetable stock
  • 2 garlic cloves minced
  • 1 tablespoon ginger minced
  • 2 tablespoons sesame or vegetable oil
  • 1 tablespoon rice vinegar
  • 3 tablespoons soy sauce
  • Handful chopped mushrooms
  • 1 stick scallion
  • Ramen noodles

Additional components

  • Veggie dumplings

Preparation

  1. Heat the oil and sauté garlic and ginger for 2-3 minutes

  2. Then add soy sauce, rice vinegar, and vegetable stock.

  3. Put on a lid and bring it to a simmer.

  4. Cook ramen noodles until done

  5. Add mushrooms, scallion, ramen noodles, and veggie dumplings.
