Gluten-Free & Vegan Chickpea-Zucchini Pizza Crust
Ingredients
- 1 fine diced middle zucchini
- 2 tablespoons flaxseeds flour or chia flour
- 1 1/2 cups chickpea flour
- 2 tablespoons potato starch
- 1 tablespoon olive oil
- Water (if needed for consistency)
- 1/2 teaspoon baking powder
- Salt, ground pepper, garlic powder
- 1/2 teaspoon pizza herbs mix (basil, oregano)
Preparation
Preheat your oven to 180°C.
In a medium to large mixing bowl, add all of your ingredients and knead until dough forms.
Place the dough onto a parchment paper-lined baking sheet and form a thin pizza crust. It's easier if you rub your hands with oil.
Reduce the oven heat to 170°C and bake the crust for 20 minutes, until golden brown.
After 20 minutes, remove the crust, top with your favorite pizza sauce and toppings, and bake in the oven for another 10-13 minutes.
