Mediterranean Polenta Pizza
Ingredients
- For the base:⠀
- • 3 cups water⠀
- • 3/4 cup organic polenta (yellow variety)⠀
- • 1 tsp Himalayan sea salt ⠀
- • sprinkle of black pepper⠀
- • 1/2 tsp each dried basil & oregano⠀
- • 1 tsp extra virgin olive oil ⠀
- For the toppings:⠀
- • 1 organic red capsicum, thinly sliced⠀
- • 1 large eggplant (Lebanese work particularly well), coarsely chopped• green tips for 2 spring onions⠀
- • sliced black olives ⠀
- • fresh basil leaves⠀
- • generous serving of nutritional yeast (optional)⠀
- • 1 – 2 tsp garlic-infused olive oil⠀

Note: if you want to bump up the protein content, you can add some crumbed tempeh
