Mediterranean Polenta Pizza

Ingredients

  • For the base:⠀
  • • 3 cups water⠀
  • • 3/4 cup organic polenta (yellow variety)⠀
  • • 1 tsp Himalayan sea salt ⠀
  • • sprinkle of black pepper⠀
  • • 1/2 tsp each dried basil & oregano⠀
  • • 1 tsp extra virgin olive oil ⠀
  • For the toppings:⠀
  • • 1 organic red capsicum, thinly sliced⠀
  • • 1 large eggplant (Lebanese work particularly well), coarsely chopped• green tips for 2 spring onions⠀
  • • sliced black olives ⠀
  • • fresh basil leaves⠀
  • • generous serving of nutritional yeast (optional)⠀
  • • 1 – 2 tsp garlic-infused olive oil⠀

Preparation

  1. Note: if you want to bump up the protein content, you can add some crumbed tempeh
