Sunflower Seed Turnip Greens Pesto

Ingredients

  • Tops of 6-8 young turnips
  • 1 handful of sunflower seeds
  • 2-3 tbsp nutritional yeast
  • 1 big pinch of coarse salt
  • Enough olive oil for a good texture

Preparation

  1. Wash and clean the tops of the young turnips thoroughly.

  2. In a blender or food processor, combine the turnip greens, sunflower seeds, nutritional yeast, and coarse salt.

  3. Blend the mixture, gradually adding olive oil until the desired texture is achieved. The pesto should be smooth and well combined.

  4. Taste and adjust seasoning if needed.

  5. The pesto is now ready to use.

  6. Cook your preferred pasta according to the package instructions.

  7. Once the pasta is cooked, drain it and return it to the pot.

  8. Add the prepared turnip greens pesto to the cooked pasta and gently toss to coat evenly.

  9. Serve the pesto-coated pasta as a delicious and flavorful dish.
