Sweet and Spicy Halloumi Vegetable Traybake
Ingredients
- 2 courgettes
- 1 cauliflower
- 2 peppers
- 6 sweet potatoes, peeled
- 2 red onions
- 6 cloves garlic
- 2 tbsp + 1 tbsp olive oil
- Salt
- 2 tbsp chipotle chilli paste (adjust for desired spiciness)
- 4 tbsp honey
- 2 blocks Halloumi
- Couscous or wraps to serve
Preparation
Preheat oven to 180°C (356°F).
Chop the vegetables, drizzle with 2 tbsp olive oil, season with salt, and bake for 40 to 50 minutes until the vegetables are almost cooked and slightly caramelized. Mix halfway through.
In a small bowl, mix together the chipotle paste, honey, and 1 tbsp olive oil. Set aside.
Pat dry the Halloumi and slice it.
When the vegetables are almost ready, add the honey and chipotle mixture, stirring it through the vegetables. Place the sliced Halloumi on top of the vegetables and bake for another 15-20 minutes until the Halloumi is soft and golden on top.
Serve and enjoy.
