Baked Cactus Rolls with Vegetables

Ingredients

  • Cactus pads
  • 1 chopped squash
  • 1 Roma tomato
  • 1/4 white onion
  • 1/2 cup cooked garbanzos
  • Handful of spinach
  • 1/3 cup cilantro
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chopped garlic
  • Salt and pepper to taste

Optional fillings

  • Beans
  • Hummus
  • Vegan cheese
  • Sauce
  • Cashew cream

Preparation

  1. Preheat your oven to 375°F.

  2. Slice the cactus pads halfway.

  3. Bake for 20-25 minutes or until soft and golden.

  4. In the meantime, sauté the vegetables: chopped squash, Roma tomato, white onion, cooked garbanzos, spinach, cilantro, seasoned with paprika, cumin, chopped garlic, and salt and pepper to taste.

  5. Once everything is ready, add optional fillings such as beans, hummus, vegan cheese, sauce, or cashew cream inside the cactus pads.

  6. Top with the cooked vegetables and roll up.

  7. Enjoy with a delicious spicy salsa.
