Mushroom and Veggie Tacos

Ingredients

  • corn tortillas
  • sliced green leaf lettuce
  • sliced hass avocado
  • sliced green bell peppers
  • sliced red bell peppers
  • sliced purple cabbage
  • diced red onion
  • diced vine ripe tomatoes
  • for the mushrooms
  • drizzle of olive oil
  • 1 clove of minced garlic
  • 2 cups of chopped portobello mushroom
  • 1 tsp of cumin
  • 1/2 tsp of pink himalayan salt
  • 1/2 tsp of paprika
  • 1/4 tsp of black pepper
  • 1/4 tsp of oregano
  • 1/4 tsp of crushed red pepper flakes
  • sprinkle of cayenne pepper (optional)

Preparation

  1. In a large pan on medium heat add olive oil and garlic

  2. Stir until fragrant and add mushrooms along with seasonings

  3. Stir until all components are well combined and cook for about 3 to 5 minutes

  4. Remove mushrooms from heat when ready and set aside

  5. Take tortillas and add mushrooms along with veggies

  6. Serve with sauce of choice(we used a chipotle hot sauce?)
