Mushroom and Veggie Tacos
Ingredients
- corn tortillas
- sliced green leaf lettuce
- sliced hass avocado
- sliced green bell peppers
- sliced red bell peppers
- sliced purple cabbage
- diced red onion
- diced vine ripe tomatoes
- for the mushrooms
- drizzle of olive oil
- 1 clove of minced garlic
- 2 cups of chopped portobello mushroom
- 1 tsp of cumin
- 1/2 tsp of pink himalayan salt
- 1/2 tsp of paprika
- 1/4 tsp of black pepper
- 1/4 tsp of oregano
- 1/4 tsp of crushed red pepper flakes
- sprinkle of cayenne pepper (optional)
Preparation
In a large pan on medium heat add olive oil and garlic
Stir until fragrant and add mushrooms along with seasonings
Stir until all components are well combined and cook for about 3 to 5 minutes
Remove mushrooms from heat when ready and set aside
Take tortillas and add mushrooms along with veggies
Serve with sauce of choice(we used a chipotle hot sauce?)
