"Notchyo" Salad Jar

Ingredients

  • Ground (not) beef
  • 1 cup of green lentils
  • Drizzle of olive oil
  • 2 cloves of garlic
  • 3/4 cup of white onion
  • 2 tsp of cumin
  • 1 tsp of pink Himalayan salt
  • 1 tsp of paprika
  • 1/2 tsp of black pepper
  • 1/2 tsp of oregano
  • Sprinkle of cayenne
  • Sprinkle of chilli powder
  • For nacho cheese sauce
  • 1 cup of soaked cashew
  • 1/2 cup of water
  • 1/4 cup of nutritional yeast
  • 1 tsp of tumeric
  • 1/2 tsp of paprika
  • 1 tsp of apple cider vinegar
  • 3/4 tsp of salt
  • 1/2 tsp of garlic powder

Preparation

  1. For topping mix

  2. Equal parts of sliced grape tomatoes, sliced black olives, minced red onion, chopped avocado, gently rolled in fresh squeezed lime juice

  3. Fillings

  4. Vegan sour cream

  5. Green leaf lettuce

  6. Directions

  7. Cook lentils in a medium sized pot until tender

  8. Combine all ingredients for cheese sauce in a blender or food processor. Blend until smooth and set aside

  9. Once lentils are ready set aside. In a medium sized pan on medium heat add olive oil and garlic. Stir until fragrant and add lentils

  10. Add remaining ingredients for ground (not) beef. Stir well for a few minutes and set aside

  11. In jar layer starting with sour cream followed by ground (not) beef, topping mix, lettuce, and cheese. Garnish with corn chips and chopped cilantro and enjoy
