Our Plant Overloaded Tacos
Ingredients
- 2 tsp of olive oil
- 2 cloves of minced garlic
- 1 1/2 cups of sliced cremini mushrooms
- 3/4 tsp of cumin
- 1/4 tsp of pink himalayan salt
- 1/4 tsp of paprika
- 1/8 tsp of black pepper
- sprinkle of dried oregano
- 2 tbs of filtered water
- 1/2 cup of chopped tomatoes
- 1/4 cup of minced red onion
- 2 1/2 tbs of minced jalapeño peppers
- 2 tsp of fresh squeezed lime juice
- fresh arugula
- sliced bell peppers
- chopped avocado
- sliced black olives
- chopped cilantro
- small tortillas
Preparation
In a cast iron pan on medium heat add olive oil and garlic
Stir until fragrant and add mushrooms along with seasonings
Stir mushrooms until evenly coated with seasonings
Add water and turn off heat leaving pan over burner
In a small bowl combine tomato, red onion, and jalapeños
Add lime juice into mixture and stir well, set aside when finished
Line up tortillas and add arugula,
Mushrooms, bell peppers, avocado, olives, and cilantro
Garnish with raw cauliflower crumbles and enjoy???? #threebunnies
