Quick Vegan Refried Beans
Ingredients
- 1/2 yellow or white onion, diced
- 2 garlic cloves, minced
- 1 tbsp avocado oil or oil of choice
- 2 (15-ounce) cans pinto beans, rinsed and drained
- 2 tbsp unsweetened plain almond milk (or plant milk of choice)
- 1/2 tsp salt
- 1/4 tsp pepper
Preparation
In a medium saucepan over medium heat, warm the oil. Add the onions and garlic and cook, stirring occasionally, until the onions have softened, about 5 to 8 minutes.
Turn the heat off then add cooked onion and garlic to a food processor or blender. Add the beans (discard liquid), almond milk and salt and pepper. Blend on high for 30 seconds or until you reach desired consistency. Taste and adjust seasonings to your liking.
