Garlic Mushroom Rice Pilaf

Ingredients

  • 1 small yellow onion, finely chopped
  • 3-4 garlic cloves, minced
  • 1 bag @rightrice
  • 1 tbsp avocado oil
  • 2 cups shiitake mushrooms, sliced
  • 1 cup cremini mushrooms, sliced
  • 1/2 tsp salt
  • 1/4 tsp pepper

Optional

  • 1 tbsp vegan butter
  • fresh cilantro or parsley for garnish

Preparation

  1. Follow the directions on the @rightrice package. Only takes 10 minutes!

  2. In a non-stick pan over medium heat, add avocado oil or oil of choice. Sauté onions and garlic for 5 minutes. Season with a small pinch of salt and then add the mushrooms and let cook for 10-15 minutes or until mushrooms are fully cooked and golden.

  3. Once the @rightrice is cooked, add it to the mushroom, garlic, and onion mixture. Mix to combine. Add an optional 1 tbsp vegan butter, taste and season with salt and pepper to your liking.

  4. For serving, garnish with fresh herbs and a squeeze of lime.
