Roasted Cauliflower and Sweet Potato Taco Bowls
Ingredients
- 1 small head of cauliflower
- 2 medium sweet potatoes
- 1 tsp cumin, 1 tsp chili powder, 1 tsp paprika, salt and pepper
- Mixed greens or lettuce
- Choice of protein (I used ground beef)
- @goodfoodforgood taco sauce
- 2 ears of corn
- 1 jalapeño
- 1 cup diced cherry tomatoes
- Shredded cheese (optional) and cilantro (optional)
Preparation
Preheat oven to 425 degrees.
Peel and chop sweet potatoes; wash and trim cauliflower.
In a large bowl, toss veggies with olive oil and spices.
Start by baking sweet potatoes; after 15 minutes, add cauliflower and continue baking for another 15-20 minutes.
Bring a large pot of water to a boil, add corn and let boil for 15 minutes.
Cook your protein and, once cooked, add half a bottle of @goodfoodforgood taco sauce.
Chop veggies.
Assemble the bowls.
