Roasted Cauliflower and Sweet Potato Taco Bowls

Ingredients

  • 1 small head of cauliflower
  • 2 medium sweet potatoes
  • 1 tsp cumin, 1 tsp chili powder, 1 tsp paprika, salt and pepper
  • Mixed greens or lettuce
  • Choice of protein (I used ground beef)
  • @goodfoodforgood taco sauce
  • 2 ears of corn
  • 1 jalapeño
  • 1 cup diced cherry tomatoes
  • Shredded cheese (optional) and cilantro (optional)

Preparation

  1. Preheat oven to 425 degrees.

  2. Peel and chop sweet potatoes; wash and trim cauliflower.

  3. In a large bowl, toss veggies with olive oil and spices.

  4. Start by baking sweet potatoes; after 15 minutes, add cauliflower and continue baking for another 15-20 minutes.

  5. Bring a large pot of water to a boil, add corn and let boil for 15 minutes.

  6. Cook your protein and, once cooked, add half a bottle of @goodfoodforgood taco sauce.

  7. Chop veggies.

  8. Assemble the bowls.

  1. This is a great meal prep idea and makes eating veggies fun.
