Spicy? Vegan Barbacoa, Anyone? Tag
Ingredients
- 1 medium onion, diced
- 3 cloves garlic, minced
- 3 tsp ground cumin
- 1 tsp ancho chili pepper
- 1 chipotle pepper in adobo sauce, sliced ~ 2 tbsp adobo sauce (adjust accordingly for spiciness)
- 2.5 heaping tbsp vegan worcestershire sauce
- 1-2 tbsp ketchup (adjust based on preference)
- 2 heaping tbsp maple syrup
- 1/2 tsp green chile (optional)
- salt to taste
Preparation
In a heated pan, sauté onion and garlic until soft, add cumin, chili, and condiments
Now the fun begins... add jackfruit, stir-mix-stir.. if it’s too dry, add a bit of water. Your kitchen will smell so sweet now.. and you probably sneeze because of the heat from chili?. Season
Transfer jackfruit into a loaf pan and bake at 350F covered for 30-35 mins. Layer with banana leaf, if you have one. Why bake it, you asked?! Well, it’s just more fancy?, no actually, I wanted the jackfruit to absorb all the flavor from the sauce.. in fact, it’s more seasoned the day after
Serve with ?or flour tortilla, salsa, ? and lime juice. I added more Worcestershire and hot sauce
