Sweet Potato Tacos
Ingredients
- 1 tbsp avocado oil
- 2 sweet potatoes diced
- 1 orange bell pepper
- 1 yellow squash chopped
- 2 tsp coconut aminos
- 2 tsp chili powder
- 1 tsp garlic powder
- 2 tsp cumin
- 2 tsp oregano
- Hot sauce optional
- Himalayan salt optional
- Siete brand almond flour tortillas
- Salsa
- Cilantro
- Cabbage
- “Fat free” refried beans (canned) optional
Preparation
Heat oil in a large nickel free cast iron skillet
Add sweet potatoes and sauté for about 5-7 minutes
Add chopped onion
Cook until union begins to soften and become translucent
Add bell pepper & spices
Stir and cook a few more minutes
Add coconut aminos or splash of water
Add hot sauce if desired
Stir in yellow squash
Continue cooking and checking potatoes for tenderness. Add more spices to taste
Heat beans in a separate pot while potatoes are cooking
Layer beans, potato hash, raw onions, smokey sour cream (cashew sour cream + smokey paprika), cabbage, salsa, cilantro and add a squeeze of lime juice on warmed tortillas and get down on that magic
