Easy Lentil Tacos for Lunch and Dinner
Ingredients
- Frozen peppers and onions
- 1-2 tablespoons tomato paste
- Dried herbs (garlic, red pepper flakes, and basil)
- 1-2 teaspoons maple syrup
- Water
- Cooked leftover lentils or rinsed canned lentils
- Corn tortilla shells
- Lettuce
- Guacamole
Preparation
Sauté frozen peppers and onions until cooked through.
Add 1-2 tablespoons tomato paste, dried herbs (garlic, red pepper flakes, and basil), 1-2 teaspoons maple syrup, and water to thin it out.
Add cooked lentils to the tomato mixture and heat through.
Heat corn tortilla shells.
Stuff the shells with lettuce, lentil mixture, and guacamole.
