Cheesy Vegan Nachos Supreme

Ingredients

  • 1 pack vegan mince (e.g., @vivavivera)
  • 1 tbsp vegetable oil
  • 1 tbsp taco seasoning
  • 2 large tomatoes
  • 1 red onion
  • 1 bag tortilla chips
  • Vegan sour cream (e.g., @oatly)
  • 1 bunch fresh coriander

Vegan Cheese Sauce

  • 1 cup unsweetened plant milk
  • 1.5 cups shredded vegan cheese (e.g., @violife_foods)
  • 1/2 tsp chilli powder (add chilli flakes for heat if using mild)
  • 1/2 tsp paprika (regular or smoked)
  • Salt to taste

Preparation

  1. Peel and dice the onion, dice the tomatoes, and chop the coriander.

  2. Make the cheese sauce by melting the shredded vegan cheese with plant milk in a saucepan. Whisk in chilli powder and paprika, and season with salt to taste. Bring to a gentle boil and cook for 5-7 minutes until it starts to thicken. Remove from heat and set aside.

  3. In a frying pan, heat oil and add the vegan mince. Mix taco seasoning into the mince and cook on medium until piping hot.

  4. To assemble the nachos, place a layer of tortilla chips on a large serving dish. Add the plant-based mince, diced tomatoes, and red onion. Pour the cheese sauce on top, add some vegan sour cream, and garnish with lots of coriander. For multiple layers, repeat the process with additional tortilla chips and toppings as desired.

  5. Dig in and enjoy!
