Crispy Avocado Spring Rolls

Ingredients

  • 3 medium ripe avocados, seeded and mashed
  • 1/3 cup chopped green onions
  • 1 jalapeño, seeded and diced
  • 3 tablespoons chopped cilantro
  • 8-10 spring roll pastry dough wrappers
  • 1 cup oil for frying or use an air fryer

Preparation

  1. In a bowl, combine the mashed avocados, chopped green onions, diced jalapeño, and chopped cilantro.

  2. Heat oil in a frying pan or wok, or preheat an air fryer if using.

  3. To assemble the spring rolls, place a spoonful of the avocado mixture in the center of each wrapper.

  4. Dip your finger in water and moisten the edges of the wrapper.

  5. Fold the bottom edge of the wrapper over the filling, then fold in the sides and continue rolling tightly until sealed.

  6. Repeat the process for all wrappers.

  7. If frying, cook the spring rolls in oil for about 2 minutes on each side until golden brown. If using an air fryer, cook at 390°F (200°C) for 15 minutes, flipping the rolls halfway through.

  8. Use metal tongs to remove the spring rolls and place them on a paper towel-lined plate.

  9. Serve the crispy avocado spring rolls immediately with your favorite dipping sauce.
