Leo's 10/10 Spiced Chicken Tacos


  • 1 large chicken
  • 3 tsp paprika
  • 2 tsp dried oregano
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp cayenne pepper
  • 1 tsp ground cumin
  • 2 tbsp olive oil, plus 1 extra tbsp
  • 4 limes
  • To serve: tortilla wraps, guacamole, vegetables, sour cream, limes, jalapeños


  1. Spatchcock the chicken or have your butcher do it for you.

  2. In a small bowl, mix together paprika, oregano, salt, garlic powder, cayenne pepper, cumin, and olive oil. Set aside.

  3. Using a sharp knife, make slits in the chicken thighs and breast, going through the skin and into the flesh.

  4. Rub the spice mix all over the chicken and set it aside.

  5. Plug in and turn on the Ninja Foodi Max Health Grill and Air Fryer.

  6. Remove the probe from the storage compartment and plug it into the Ninja. Insert the metal probe into the thickest part of the chicken breast.

  7. Select the ROAST cooking function, press PRESET, and choose CHICKEN using the arrows.

  8. Put the extra tbsp of olive oil into the Ninja and press START/STOP to preheat. Close the lid. The Ninja will alert you when it's time to add the food.

  9. Once preheated, add the chicken skin side down and close the lid. Use the remaining time to prepare the rest of the ingredients.

  10. When the chicken temperature is 10-15 degrees from the target temperature, turn the chicken skin side up. Slice 2 limes and place them around the chicken. Close the lid.

  11. When it's ready, the Ninja will beep. Let the chicken rest for ten minutes. Squeeze some cooked lime over the chicken and serve.
