Spiced Arabic Beef Stew
Ingredients
- 1/2 teaspoon ground mastic
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon paprika
- 1 teaspoon cardamom
- 1 teaspoon turmeric
- 1 teaspoon black pepper
- 1 tablespoon salt
- 3 bay leaves
- 5 whole cardamom pods
- 1 piece beef thigh
- 1 medium onion, quartered
- 1 tablespoon sugar
- 1 medium tomato, quartered
For sautéing
- 1 tablespoon ghee
- 1 medium onion, sliced
- 4 cloves garlic, crushed
- 2 green peppers, chopped
- 1 large red bell pepper, cut into small strips
Preparation
Mix the mastic, cardamom, cumin, coriander, paprika, salt, and pepper in a bowl.
Heat ghee in a pot, add the meat, and stir until golden brown.
Sprinkle half of the spice mixture and sugar on the meat, and continue sautéing.
Add bay leaves, whole cardamom, quartered onion, and quartered tomato, and continue sautéing.
Cover the meat with boiling water, cover the pot, and let it cook.
Remove the meat, let it cool, and cut it into cubes as desired.
In a skillet, heat ghee, add sliced onion, crushed garlic, and chopped peppers, and sauté lightly.
Add the meat, sprinkle the remaining spices, sauté until it gets a nice color, and serve.
