Turkish Bulgur Raw Köfte

Ingredients

  • 2 cups fine bulgur
  • 1 tea glass olive oil
  • 1 onion
  • 3-4 cloves garlic
  • 1/2 tea glass pomegranate molasses
  • 1 teaspoon ground red pepper
  • 1 teaspoon sumac
  • 1 teaspoon red pepper flakes
  • 1 teaspoon isot pepper (optional)
  • Juice of 1 lemon
  • Almost 1 cup boiling water (less 2 fingers)
  • 2 tablespoons tomato paste
  • 2 tablespoons pepper paste
  • Salt to taste

Preparation

  1. Put the onion and garlic in the blender and blend until chopped.

  2. Then add all other ingredients except water and blend until mixed.

  3. After mixing, add the water and blend again.

  4. After adding water and mixing, let it sit for 10 minutes to allow the bulgur to swell.

  5. Then blend for another 10 minutes.

  6. Once the mixture reaches the desired consistency, transfer to a bowl, shape by squeezing, and serve.

Tips

  1. Be careful not to overheat the blender motor; blend intermittently.
