Turkish Rice Pilaf with Chickpeas
Ingredients
- 1.5 cups basmati rice or baldo rice
- 1 tablespoon butter
- 0.5 cup vegetable oil
- 1 cup cooked chickpeas (optional)
- 3 cups chicken broth
- 0.5 liters boiling water for soaking rice
Preparation
First, the rice is soaked in boiling water for about an hour
After the time is up, vegetable oil is added to the pan
The rice is rinsed with cold water, drained, and added to the pan
Sauté for 10 to 15 minutes
Just before adding the liquid, add 1 tablespoon of butter and stir
Pour boiling chicken broth over the rice
Optionally, add 1 cup of cooked chickpeas, stir, and close the lid
Cook on medium heat until the liquid is absorbed
Once cooked, check the pilaf, turn off the heat, cover with a clean cloth, and let it rest
Tips
Soak the rice in boiling water for at least 1 hour
Sauté the rice for 10 to 15 minutes
Use boiling water for the cooking liquid
