Arabic Cardamom Rice Pudding
Ingredients
- 1 cup basmati rice
- 1 1/2 cups sugar
- 4 tablespoons butter
- 1 teaspoon ground cardamom
Garnish
- Ground cardamom, fruits or nuts
Preparation
Prepare serving glasses or small plates.
Wash the rice well and soak it in water for 10 minutes.
Drain the rice, place it in a medium-sized pot, add 3 cups of water, and let it boil gently until fully cooked and very soft.
Add the sugar, cardamom, and 2 cups of water, then continue cooking until the mixture has a syrupy consistency.
In a blender, blend the rice mixture until smooth like muhallebi, adding some water as needed.
Return the mixture to the pot, add the butter, and let it boil for 1 minute to ensure the desired thickness.
Distribute the mixture into the glasses and place in the refrigerator to set.
Sprinkle more cardamom and garnish as desired.
