Arabic Cardamom Rice Pudding

Ingredients

  • 1 cup basmati rice
  • 1 1/2 cups sugar
  • 4 tablespoons butter
  • 1 teaspoon ground cardamom

Garnish

  • Ground cardamom, fruits or nuts

Preparation

  1. Prepare serving glasses or small plates.

  2. Wash the rice well and soak it in water for 10 minutes.

  3. Drain the rice, place it in a medium-sized pot, add 3 cups of water, and let it boil gently until fully cooked and very soft.

  4. Add the sugar, cardamom, and 2 cups of water, then continue cooking until the mixture has a syrupy consistency.

  5. In a blender, blend the rice mixture until smooth like muhallebi, adding some water as needed.

  6. Return the mixture to the pot, add the butter, and let it boil for 1 minute to ensure the desired thickness.

  7. Distribute the mixture into the glasses and place in the refrigerator to set.

  8. Sprinkle more cardamom and garnish as desired.
