Smokey Fresh Moroccan Style Chickpea Bowl

Ingredients

  • extra virgin olive oil
  • onion
  • bell pepper
  • a can of rinsed chickpeas
  • and a diced carrot
  • 1tsp of smoked paprika
  • turmeric and garam masala spice
  • curly kale
  • avocado
  • some lemon
  • juice and some fresh parsley
  • h salt and pepper to taste

Preparation

  1. In 1 tsp of extra virgin olive oil, cook a diced onion ?, a diced bell pepper, a can of rinsed chickpeas, and a diced carrot ? for 5mins. -

  2. Mix in 1tsp of smoked paprika, turmeric and garam masala spice. Then add a handful of curly kale ?(wash and rinse taking out big stems, and give it a little massage to make it softer) cook for another few mins. ✨

  3. While this is cooking dice an avocado ?, once done put it all in a bowl and squeeze on some lemon ? juice and some fresh parsley ?! Season with salt and pepper to taste
