Healthy Qatayef

Ingredients

  • 1 and half cup whole wheat flour
  • 1/2 cup fine semolina
  • 3 tablespoons vegetable sugar
  • 1/2 teaspoon yeast
  • 1/2 teaspoon baking powder
  • 1 pinch of salt
  • 1/2 teaspoon ground cardamom
  • 1 pinch of saffron threads
  • 1 and a half cup of warm water
  • For the filling: vegan cream cheese, rushed nuts with sugar and cinnamon, vegan mozzarella cheese

Preparation

  1. Mix all ingredients in the food processor

  2. Let the dough rest for 30 to 60 minutes

  3. Heat an empty non-stick frying pan

  4. Pour approximately a quarter of a cup of the mixture and wait until bubbles appear on the surface

  5. Keep the qatayef disks in a box lined with a towel until you finish cooking all of the batter

  6. Stuff the Qatayef with any of the listed fillings as desired

  7. You can fry the Qatayef or bake it in the oven at 200 degrees for 5-8 minutes on each side

  8. It is possible to dip the Qatayef in sugar syrup, but I prefer to drizzle it with date molasses or coconut molasses and enjoy . * Stuffed qatayef may be frozen before frying or baking until needed
