Hummus with Shawarma Spiced Mushroom Mince

Ingredients

  • 2 cups Oil-free Hummus
  • 300 g Mushrooms finely chopped
  • 1 Yellow Onion finely chopped
  • 2 tbsp Pine Nuts
  • 1 tsp Dark Mushroom Soy Sauce
  • 1 tbsp Shawarma Seasoning
  • Toasted Pine Nuts for garnish
  • Garden Cress for garnish

Shawarma seasoning mix

  • 1 tsp Cumin
  • 1 tsp Garlic Powder
  • 1 tsp Coriander Powder
  • 1/2 tsp Paprika Powder
  • 1/2 tsp Black Pepper
  • 1/2 tsp Ground Cayenne
  • 1/2 tsp Ground Cinnamon
  • 1/2 tsp Ground Turmeric
  • a pinch Ground Cloves
  • Salt to taste

Preparation

  1. Sauté onion in a little bit of water until translucent.

  2. Add the remaining ingredients and fry on medium high heat until mushrooms are cooked and some bits start to get crispy, stirring frequently and adding more water as needed to avoid burning the mushroom mince.

  3. Pile hummus in the center of a shallow bowl.

  4. Starting from the center, push the hummus with a tablespoon towards the edge of the bowl while slowly spinning the bowl with your other hand to create a hummus pit.

  5. Add the mushroom mince and top with garnish.

  6. Serve with bread or as a side dish.
