Cheesy Cumin-Spiced Avocado and Black Bean Quesadillas

Ingredients

  • 2 almond tortillas
  • Avocado oil
  • Spinach
  • Black beans
  • Cumin
  • Vegan Gouda or other cheese
  • Avocado

Mango chipotle sauce

  • 1/2 ripe mango
  • 1-2 tablespoons chipotle sauce

Preparation

  1. Heat a pan with avocado oil spray on medium-high heat and cook the almond tortillas while wilting the spinach in the same pan.

  2. Mash black beans onto one side of each tortilla and sprinkle with cumin.

  3. Top the beans with vegan Gouda or cheese of choice.

  4. Once the cheese begins to melt, add the wilted spinach and mashed avocado, then fold the tortilla over.

  5. Cook for an additional 30 seconds.

Mango chipotle sauce

  1. Blend 1/2 ripe mango with 1-2 tablespoons of chipotle sauce.
