Spicy Thai Peanut Ramen
Ingredients
- 2 teaspoons olive oil
- 3 cloves garlic
- 1 teaspoon ginger
- 1 teaspoon green curry paste
- 4 cups vegetable broth, divided
- 1 can coconut milk (13-14 oz), full fat
- 1/2 cup peanut butter
- 2 tablespoons soy sauce
- 2 tablespoons agave syrup
- juice of 2 limes
- 9-12 ounces ramen noodles

Preparation
Heat olive oil in a large pot over medium heat.
Add garlic and ginger, sauté for 1-2 minutes until fragrant.
Stir in green curry paste and cook for another minute.
Pour in half of the vegetable broth to deglaze the pot.
Add coconut milk, peanut butter, soy sauce, and agave syrup. Stir until well combined and smooth.
Add the remaining vegetable broth and bring to a simmer. Cook for 10-15 minutes to develop flavors.
Stir in lime juice and adjust seasoning if needed.
Add ramen noodles and cook according to package instructions, typically 3-5 minutes, until tender.
Serve hot, optionally garnished with toppings.
