Turkish Red Lentil Soup
Ingredients
- 1c red lentils
- 1 small Spanish onion
- 3 carrots
- 1c vegetable broth
- 1.5c water
- 2 tbs tomato paste
- 1 big potato or 2 small
- 1tsp dry dill and mint
- s & p. Put everything in big pot medium heat
- cover it and let it do its thing. It cooks really fast
Preparation
Then transfers to a blender, food processor or use an immersion blender, add more water if you want a thinner consistency
Garnished with plain yogurt or coconut cream, fresh dill and mint, a few drops of lemon juice and red pepper (middle eastern) or red pepper flakes, and of course ! a perfect crusty grilled cheese sandwich! Enjoy
