Turkish Red Lentil Soup

Ingredients

  • 1c red lentils
  • 1 small Spanish onion
  • 3 carrots
  • 1c vegetable broth
  • 1.5c water
  • 2 tbs tomato paste
  • 1 big potato or 2 small
  • 1tsp dry dill and mint
  • s & p. Put everything in big pot medium heat
  • cover it and let it do its thing. It cooks really fast

Preparation

  1. Then transfers to a blender, food processor or use an immersion blender, add more water if you want a thinner consistency

  2. Garnished with plain yogurt or coconut cream, fresh dill and mint, a few drops of lemon juice and red pepper (middle eastern) or red pepper flakes, and of course ! a perfect crusty grilled cheese sandwich! Enjoy
