Chili Mac

Ingredients

  • 2 cloves of garlic
  • 1 1/2 cups of chopped yellow onion
  • 1/2 cup of chopped orange bell pepper
  • 1/2 cup of chopped yellow bell pepper
  • 1/2 cup of chopped jalapeño peppers
  • 1 3/4 cup of chopped squash
  • 1 cup of chopped zucchini
  • 2 cups of chopped portobello mushroom
  • 2 Tbs chilli powder
  • 1 Tbs cumin powder
  • Pink himalayan salt to taste
  • 1/2 tsp of black pepper
  • 1/2 Cup chopped tomato
  • 1 1/4 cup of soaked black beans
  • 4 Vine ripe tomatoes blended or one can tomato sauce
  • 3 1/2 cups of pasta
  • 3/4 cup of cheese sauce
  • 2 tbs of coconut milk
  • 1/4 tsp of pepper
  • 1 tsp vegan butter

Preparation

  1. In a large pot over medium heat add olive oil, garlic, onion, bell peppers, and jalapeño peppers

  2. Stir for a few minutes until slightly softened

  3. Add zucchini, squash, and mushrooms.

  4. Stir for about 5 to 8 minutes.

  5. Next add seasonings and stir until all ingredients are well combined.

  6. Add tomatoes, beans, and blended tomatoes.

  7. Let simmer on medium low heat for about 25 minutes.

  8. In a medium pot on medium heat bring water to a boil.

  9. Add pasta and cook for appropriate directions.

  10. When pasta is ready drain and add remaining ingredients.

  11. Mix mac and cheese into chili and stir well.

  12. Garnish with lots of fresh chopped parsely, nutritional yeast flakes, and enjoy
