Our Tortilla Pizzas

Ingredients

  • For the sauce
  • 2 tbs of olive oil
  • 3 cloves of garlic
  • 1 1/2 cup of chopped vine ripe tomatoes
  • 1/4 cup of sun dried tomatoes
  • 1/4 tsp of pink himalayan salt
  • 1/4 tsp of black pepper
  • 1/4 tsp of dried basil
  • For the toppings
  • Sliced shiitake mushrooms
  • Sliced artichoke hearts
  • Sliced grape tomatoes
  • Capers
  • Baby spinach
  • 3 small flax seed tortillas

Preparation

  1. In a small pot on medium heat add olive oil and garlic

  2. Stir until fragrant, then add tomatoes and seasoning

  3. Allow sauce to simmer for 20 minutes

  4. Once time is up place sauce in a blender or food processor and blend until smooth

  5. Preheat oven to 350°

  6. Cut tortillas into fours and bake for 8 minutes

  7. Remove tortillas from oven once time is up

  8. Add sauce and toppings

  9. Place pizzas in oven for another 8 to 10 minutes

  10. When time is up remove and allow to cool for 5 minutes

  11. Add fresh spinach and garnish with crushed red pepper flakes
