Pancakes

Ingredients

  • 1/2 cup rolled oats
  • 1 cup whole wheat pastry flour
  • 1 tsp baking powder
  • 1 cup plant milk
  • 2 mashed bananas
  • pinch cinnamon
  • a pinch salt
  • and half cup blue frozen blueberries. •

Preparation

  1. Set griddle or pan on stove top to medium heat

  2. Peel and mash bananas in a medium bowl

  3. Add remaining wet ingredients and mix very well

  4. Add dry ingredients except blueberries into same bowl and mix to combine

  5. Fold in blueberries

  6. Scoop 1/3 cup pancake mix and place on griddle

  7. Spread scoop out into a circle

  8. Flip pancakes when bubbles form and the top of pancake looks slightly dried, about 5 minutes

  9. Serve with warmed frozen berries, nut butter or fresh fruit
