Pancakes
Ingredients
- 1/2 cup rolled oats
- 1 cup whole wheat pastry flour
- 1 tsp baking powder
- 1 cup plant milk
- 2 mashed bananas
- pinch cinnamon
- a pinch salt
- and half cup blue frozen blueberries. •
Preparation
Set griddle or pan on stove top to medium heat
Peel and mash bananas in a medium bowl
Add remaining wet ingredients and mix very well
Add dry ingredients except blueberries into same bowl and mix to combine
Fold in blueberries
Scoop 1/3 cup pancake mix and place on griddle
Spread scoop out into a circle
Flip pancakes when bubbles form and the top of pancake looks slightly dried, about 5 minutes
Serve with warmed frozen berries, nut butter or fresh fruit
